California Avocado Breakfast Burrito

Ingredients:

California Avocado Breakfast Burrito

  • 4 flour or corn tortillas
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/3 cup chopped onion
  • 3 tbsp butter
  • 8 eggs
  • 1/4 tsp salt
  • 1/2 cup shredded Pepper Jack Cheese
  • 1 ripe California avocado, peeled, seeded and diced
  • Sour cream for garnish
  • Tomatillo or tomato salsa for garnish

Preparation:

  1. Wrap tortillas in foil and warm in 400 F oven.
  2. Meanwhile, saute bell pepper and onion in butter until softened.
  3. Meanwhile, beat eggs and salt together.
  4. When peppers and onion are done, pour eggs into pan.
  5. Gently stir in avocado.
  6. Cook over medium-low heat, stirring constantly, until soft curds form, about 3 minutes.
  7. Put 1/4 of the egg mixture down the center of the warmed tortilla.
  8. Roll up one side and repeat with each tortilla.
  9. Garnish each burrito with a dollop of sour cream and a spoonful of salsa.

 This recipe is for four servings.
