Poached Eggs with Avocado and Tomato Mix

AvocadoIngredients

  • 4 eggs – organic
  • 2 medium tomatoes, diced
  • 1 avocado, diced
  • 1 small shallot, diced
  • 1/2 lemon – juiced
  • 1/2 tsp. curry powder
  • 1/4 tsp. garlic powder or 1 clove of fresh garlic, chopped
  • Olive oil
  • Salt and pepper (can be cayenne) to taste

Preparation

  1. * Bring a pot of water to a roaring boil and low the heat to let simmer
  2. * Break the eggs individually into a small bowl
  3. * Add olive oil to the water and drop the eggs into it one by one
  4. * Once the egg white is firm, remove from the pot gently and let it dry
  5. * Season with salt and pepper to-taste
  6. * In a separate bowl, mix the rest of the ingredients
  7. * Serve over the poached egg on a whole wheat toast
